For this sweet August Slow Session, Tessa Halstead of Chocolaterie Tessa, will lead a tour of her facilities and chocolate ganache demo, followed by a chocolate tasting and discussion. Tessa, who works with bean-to-bar companies like SRSLY Chocolate, will also explain the pros and cons working with industrial versus craft chocolate, as well as the differences and similarities between chocolate makers and chocolatiers. Come learn about all the labor involved (3 days worth!) in making just one piece of chocolate.
