“Good bread is the most fundamentally satisfying of all foods; and good bread with fresh butter, the greatest of feasts.” James Beard, Beard on Bread.

Despite Beard’s words, most of the time bread is part of the feast, eaten alongside, wrapped around or placed under other food. Bread is eaten in many different ways in different cuisines around the world. In our Slow Session, we will explore some of the different ways that bread is eaten and the foods that are eaten with it, as I believe that breads have developed along with their respective cuisines and are integral to them.

From the open-faced sandwiches of Scandinavia, to French country breads, to the mysterious salt-free bread of Tuscany, we’ll look at bread integrated into everyday meals. We’ll also examine some traditional and special occasion bread pairings and look at how some breads can enhance or detract from various cheeses. Of course, we’ll have a variety of breads to taste and some food examples to go with them.

David Norman, Head Doughpuncher

Recently selected as one of the Top Ten bread bakers in the country by Dessert Professional Magazine, David Norman is the Head Doughpuncher and a partner at Easy Tiger Bake Shop and Beer Garden.  His route there has included stints at some of the countries best bread bakeries from Seattle to New York City and included teaching professional bread courses at the French Culinary Institute and the San Francisco Baking Institute.

David’s interest in baking was born from his encounters with unfamiliar and inspiring breads during a couple years studying abroad. As a high school exchange student in Sweden and later as a student of German Literature at the University of Munich, he discovered a variety of new breads and new ways of eating centered on these breads. When he returned to complete his studies at the University of Florida, he found little choice to satisfy cravings for good bread but to make his own.  When he discovered a job opening at a small French-style bakery across town, he took the next step with his hobby and soon discovered a passion deep enough to turn his career focus toward bread baking.

Slow Sessions are educational events that are always free and open to the public. The goal is twofold: (1) to provide opportunities for Austinites to learn more about their food and where it comes from (2) to support local businesses whose values align with the Slow Food mission of good, clean and fair food for all.

Join us for a night in LENOIR’s wine garden to support our friends in need at Green Gate Farms, a farm that has always been there for the Austin community. For the past three months, Green Gate Farms has gone through events that neither a family nor small business should have to experience in a lifetime, let alone a year. First, Farmer Skip was hit by a reckless driver, totaling their delivery van and resulting in medical issues that prevented him from planting crops for their Community Supported Agriculture distribution. They then received a notice from their landlord that rent will be raised on their city farm. And lastly, Bastrop County denied agricultural valuation for their River Farm, meaning their taxes will be nearly seven times higher than they usually pay. Proceeds from the happy hour will be donated to Green Gate Farms to help alleviate this financial stress.

Your $15 entry donation (via cash or credit card) will go directly to keeping Green Gate Farms so Skip and Erin can continue their passion of farming and food education to benefit all of us in Central Texas! Complimentary drink and specially priced snacks will be available.

Mushrooms! Beer! Pie! Oh, my! Venture out to the Texas Hill Country for a tour at Logro Farms, a “full cycle” sustainable farm at Ceres Park Ranch, home of Jester King Brewery and Stanley’s Farmhouse Pizza. Logro uses spent grains from Jester King to grow delicious mushrooms, herbs, and an assortment of veggies. In turn, the fruits of Logro’s labor become ingredients in Jester King’s beer and Stanley’s menu items.

Ticket price includes a tour of Logro Farms, Logro’s “Sustainable Farming with Mushrooms” class, and a takeaway of fresh oyster mushrooms and herbs. The tour kicks off by picking-up on Jester King’s free brewery tour. We encourage ticket holders to arrive early for a pint or two at Jester King or stay afterwards for Stanley’s Farmhouse Pizza.

Mead or honey wine is the oldest alcoholic drink known, yet many are still unfamiliar with the brewing process and varied flavors. The guys behind Meridian Hive are truly passionate about their craft and will take us through a journey of side-by-side honey varietal and mead tastings.

Meridian Hive was founded in 2012 by three explorer’s with a sense of adventure and a vision… to reinvent the perception of mead. The craft of fermentation is what brought them together. They originally met through local home-brew meetings in 2008 and found a similar passion. As ingredients were explored, characteristics were discovered, and variables minimized, glorious recipes were born. As the three shared their ideas of mead with each other, the journey started to coalesce. A collaboration was inevitable. When the mead started flowing in 2013, Meridian Hive finally got the chance to share their glory of exploration with all who are willing to take the journey.

Whether you’re a cooking connoisseur, a food-biz wiz, or gastronome novice, Slow Food Austin challenges you to join its second annual Grub Trivia fundraising event on August 17th at Saengerrunde Hall. Up to 30 teams will compete to win the surprise grand prize and the honor of being named the quickest slow foodies in town.

Emceed this year by John Antonelli of Antonelli’s Cheese Shop, the food-focused, pub-style trivia game will also include round prizes; a “grub crawl” of tastings from more than a dozen of Austin’s finest “slow” restaurants and artisans; happy-hour priced local brews, wines, and spirits; raffle prizes from local businesses; and its famous halftime hog butchery by Bryan Butler of Salt and Time Butcher Shop and Salumeria with cuts auctioned by Andy Langer.

Slow Food Austin will also present its Snailblazer Award to a member of the food community who has made a significant impact for the cause of “Good, Clean, and Fair Food.”
